Sean's philosophy on great dining is all about bringing people together. Sean takes great pride in offering a relaxed, uncomplicated atmosphere, an atmosphere that complements his fresh and honest fare, simply prepared to let the natural flavours shine through. Authenticity is also really important to Sean, going the extra mile to ensure the ingredients he uses are the freshest in the country or the best worldwide.
From 1995 to 2010 Sean was the Executive Head Chef at Astral, a restaurant he steered to receive five consecutive chefs' hats. Following on from this success he launched his namesake restaurant, Sean's Kitchen, in the same venue. In 2009 Sean hosted the award winning 13 part series on SBS called "My Family Feast" and the cookbook released to coincide with the launch of the series won best ‘celebrity chef' cook book in the world at the 2011 Paris book fair. Sean then opened the doors to The Grill by Sean Connolly, and as if the challenge of setting up a new restaurant wasn't enough, a six-part documentary called "Under the Grill" was created to follow Sean's journey. Sean later developed The Morrison on George St, Sydney, and more recently the authentic Italian Gusto at the Grand here at SkyCity.
